Imperial Thai began with a simple frustration: you could find Thai food in Billings, but you could not find Thai dining in Billings. The flavours were being flattened for a market nobody had bothered to test.
So we built the opposite. A kitchen that makes its own Thai sauces every morning, sources lemongrass and kaffir lime leaf weekly, and sends nothing out of the pass that would embarrass a cook in Bangkok. And a room to match — gold, lacquer, lotus, and enough space between tables that a conversation stays yours.
